The route that coffee runs from the plantation to the cup goes through three stages or phases. The agricultural phase takes place in the tropical zone of our planet where, in addition to the harvest, takes place the arrangement or "beneficiado" wet or dry system, the selection and the classification in order to get the green coffee, clean and healthy seeds of different species of the Coffea group. The commercial phase comprises the international agricultural futures market, export and logistics to consumer’s countries. The last phase, in consumer’s countries, takes place in the industry with the transformation in roasted coffee, as a result of a process based on a combination of time and temperature, which develops all its organoleptic qualities (aroma and flavour). Finally, coffee is distributed to food sector or Horeca markets and become the beverage usually consumed.
